Jam, Jelly, & Fruit Butter

Our fruit products are made the modern way with low-methoxyl pectin derived from citrus peel and pulp. Its jelling power is activated by the calcium naturally present in most fruit, NOT by sugar content. This enables us to make our fruit recipes with a ratio of 8 cups of fruit : 1 cup of sugar. We add unsweetened apple juice as a base for our preserves.
